Outlook (the one with MS Office, not the Outlook Express) support IMAP.
Basically IMAP and POP3 will both let you access your mail on the target's server. But IMAP is generally to where you can connect with the server and stay connected. Once connected, you can create folders, move mail between them, etc. Whereas POP3, you basically connect, download email, and disconnect.
In most email programs you can create folders and move mail between them too. With the IMAP, you can do this on the email server itself. Lets say the server offers IMAP and web based email. If you create folders with the web based email, then they would also be viewable via IMAP.
